Is AMAI hard to adjust to utilize higher unit caps and new units?
Would it be hard to modify AMAI to adapt to changes from default melee game... Such as upping the food limit from 100 to 125 and raising upkeep to 60/100... Would AMAI automaticly adapt or would I manually have to change the scripts?

Also, how would AMAI handle new units/buildings?

The strategy scripts would need manual adjustment to know to build more units.

Cannot automatically handle new units and buildings. They have to have there codes assigned in a configuration file. Effecitivly so it knows the tech tree.

Would this be a lot of work for me to tweak this? I had a bit of experience in ai editing for the campaign AI scrips... But those are pretty basic scripts compared to even the default melee scripts...

Check out the Beginners tutorial for the basic strategy scripting

Then check out the campaign/Mod creation section for defining new units and food/upkeep limits.
